Air Fryer Wiener Schnitzel: Tender and juicy breaded veal cutlets.
Ingredients:
  • 1 pound veal, scallopini cut
  • 2 tablespoons lemon juice
  • 0.25 cup all-purpose flour
  • 1 tablespoon chopped fresh parsley
  • 1 cup panko bread crumbs
  • nonstick cooking spray
  • 1 lemon, cut into wedges
Instructions:
  • Preheat the air fryer to 400°F (200°C).
  • Lay veal on a clean surface and season generously with lemon juice, salt, and pepper.
  • Prepare a dredging station: spread out flour in one dish, whisk together egg and parsley in another dish, and place bread crumbs in a third dish. Coat each veal cutlet in the following order: flour, egg-parsley mixture, then bread crumbs, pressing firmly for optimal coating adherence.
  • Lightly coat the air fryer basket with nonstick cooking spray. Arrange the breaded veal cutlets in the basket, ensuring they are not crowded. Lightly spray the tops with nonstick cooking spray.
  • Cook veal for 5 minutes on one side. Flip, spray any chalky spots with nonstick cooking spray, and cook for an additional 5 minutes. Repeat with remaining veal. Serve with lemon wedges.
