Elevate brown rice with garlic, Parmesan, basil, and nuts in an Italian-inspired air fryer stuffed tomato dish.
Ingredients:
  • 4 medium tomatoes
  • olive oil, as needed
  • 1 cup cooked brown rice
  • 0.33333334326744 cup freshly grated Parmesan cheese
  • 0.25 cup crumbled goat cheese
  • 0.25 cup chopped toasted walnuts
  • 2 tablespoons chopped fresh basil, divided, or more to taste
  • 2 cloves garlic, minced
  • 0.25 cup Italian-seasoned bread crumbs, divided
  • 1 tablespoon olive oil
Instructions:
  • Remove the tops of the tomatoes and use a melon baller to scoop out the flesh, ensuring to leave 1/4- to 1/2-inch thick sides and bottoms. Discard the tomato tops and flesh.
  • Coat the air fryer basket with a layer of olive oil.
  • In a medium bowl, mix together cooked rice, Parmesan cheese, goat cheese, walnuts, chopped basil, and minced garlic. In a separate small bowl, combine bread crumbs with olive oil. Fill tomatoes with the rice mixture, then top with the bread crumb mixture. Transfer the stuffed tomatoes to the air fryer basket.
  • Air fry at 370 degrees F (188 degrees C) until tomatoes are tender, filling is heated through, and topping is golden brown, approximately 15 minutes. Finish by sprinkling with the remaining basil for a fresh touch.
