Crispy air fryer Italian frittole recipe

Air fried cheesy Italian fritters: a savory twist on traditional doughnuts. Crispy and flavorful with minimal oil. Perfect for lunchboxes or party appetizers.
Ingredients:
  • 3 (about 500g) zucchini, coarsely grated
  • 4.80 gm sea salt flakes
  • 110g (3/4 cup) plain flour
  • 55g (1/2 cup) coarsely grated mozzarella
  • 40g (1/2 cup) finely grated parmesan
  • 40.00 gm bought basil pesto
  • Tomato pasta sauce, warmed, to serve
Instructions:
  • Salt zucchini in colander and let it sit for 10 minutes. Squeeze out liquid with your hands. Transfer to a large bowl and mix in flour, mozzarella, parmesan, garlic, pesto, and egg until thoroughly combined.
  • Prepare the air fryer by lining the basket with baking paper. Then, portion out tablespoonfuls of the mixture onto the paper, leaving space between each spoonful for spreading. Spritz the fritters with oil. Air fry at 180C, flipping them halfway, for 15 minutes until golden and fully cooked. Repeat the process with the rest of the zucchini mixture.
  • Pair with a rich tomato pasta sauce for a delectable dipping experience.
