Air-fried cheesy shrimp taquitos: crispy, quick, and easy!
Ingredients:
  • 0.5 pound medium shrimp - peeled, deveined, and coarsely chopped
  • 1 large jalapeno pepper, seeded and minced
  • 1 teaspoon taco seasoning
  • 1 teaspoon olive oil
  • 4 ounces nacho Cheddar cheese sauce
  • 12 corn tortillas
  • 0.5 (16 ounce) can refried beans
  • 1 serving cooking spray
Instructions:
  • In a large bowl, toss shrimp, jalapeno, taco seasoning, and olive oil until fully coated. Heat a large skillet over medium-high heat, add the shrimp mixture, and cook for 4 minutes. Turn off the heat and fold in the cheese sauce. Allow it to cool for 5 minutes before serving.
  • Heat up the air fryer to 400°F (200°C).
  • Place tortillas in a moist paper towel and heat in the microwave on high for about 20 seconds until warm.
  • Fill each tortilla with a lavish spoonful of 1 tablespoon refried beans and 1 tablespoon shrimp mixture, then elegantly roll them up. Arrange the taquitos in a single layer in the air fryer basket, ensuring they are seam-side down. Give the tops a spritz of cooking spray.
  • Air fry the taquitos for 6 minutes until perfectly crispy. Place them on a plate lined with paper towels to absorb any excess oil. Repeat the process with the rest of the taquitos.
