Create tasty root vegetable sticks with your favorite mix in the air fryer.
Ingredients:
  • 1 pound assorted root vegetables (carrots, parsnips, beets, onions, and or sweet potatoes) peeled and cut into bite-size pieces
  • 1 tablespoon olive oil
  • 1 teaspoon seasoning blend
  • 0.5 cup plain Greek-style yogurt
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh herbs
  • 0.125 teaspoon salt
  • 0.125 teaspoon freshly ground black pepper
Instructions:
  • Preheat the air fryer to 400 degrees F (200 degrees C). Coat root vegetables in oil, seasoning, 1/4 teaspoon salt, and 1/4 teaspoon pepper in a large bowl.
  • Arrange the sticks in the air-fryer basket in batches if necessary.
  • Air-fry the sticks until tender and golden, turning or stirring halfway through, for about 18 minutes.
  • Mix yogurt, citrus zest, citrus juice, herbs, a pinch of salt, and a pinch of pepper in a small bowl to create a flavorful dip. Enjoy with veggie sticks.
