Spiced side dish with cinnamon, cumin, garlic, bay leaf, and a zesty lemon finish.
Ingredients:
  • 1.5 cups water
  • 2 pounds carrots, peeled and sliced
  • 5 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 3 cloves cloves garlic, crushed
  • 0.5 teaspoon dried thyme leaves
  • 1 teaspoon lemon juice
Instructions:
  • Set up a steamer in a saucepan filled with 1 1/2 cups of water. Cover and bring to a boil. Add sliced carrots, lower heat to medium, cover, and steam until tender yet slightly firm (about 4 to 6 minutes, adjusting for slice thickness). Set aside 1/2 cup of the cooking liquid.
  • In a skillet, warm olive oil over medium heat. Lower the heat and mix in salt, pepper, cinnamon, cumin, garlic, and thyme. Sauté the spices and garlic until aromatic, stirring often, for approximately 10 minutes. Pour in 1/2 cup reserved cooking liquid and add the bay leaf. Cover and simmer for 20 minutes.
  • Mix the carrots in, ensuring they are well coated with the spice mix, and cook until warmed for about 2 to 3 minutes. Garnish with lemon juice and discard the bay leaf prior to serving.
