Algerian Flafla (Bell Pepper Salad)

Tender roasted green bell peppers cooked with olive oil, garlic, onion, and tomatoes. Serve with baguette slices.
Ingredients:
  • 3 green bell peppers
  • 1 tablespoon finely chopped red onion
  • 1 clove garlic, minced
  • salt and pepper to taste
  • 1 roma (plum) tomato, diced
Instructions:
  • Preheat the oven to 450°F (230°C). Arrange the whole peppers on aluminum foil and bake them until the skin is charred in spots and the peppers are tender, for 30-45 minutes, flipping them as needed.
  • Take the peppers out of the oven and allow them to cool for 10 minutes. Peel, deseed, and remove the stem. Chop the roasted peppers into half-inch pieces.
  • In a skillet over medium heat, sauté the onion in olive oil until softened and translucent, about 5 minutes. Add garlic, salt, pepper, chopped peppers, and tomato. Cook until the tomato is soft and ingredients are well mixed, about 5 minutes.
