Juicy meatballs in zesty tomato sauce, perfect with a crispy baguette.
Ingredients:
  • 1 pound lean ground beef
  • 4 cloves garlic, minced, divided
  • 0.25 cup finely chopped onion, divided
  • 3 roma (plum) tomatoes, diced
  • 1 teaspoon dried parsley
  • 0.5 teaspoon ras el hanout
  • 0.5 cup water
Instructions:
  • Mix ground beef with half of the minced garlic and a tablespoon of chopped onion until fully incorporated. Shape into 1 1/2-inch oblong patties to make 12 to 14 meatballs.
  • Preheat a skillet over medium-high heat. Cook the patties in batches until golden and cooked through, about 10 minutes. Transfer them to a serving dish and continue with the rest of the patties.
  • Lower the heat to medium, then mix in the rest of the chopped onion along with salt and pepper. Saute the onions in the drippings, stirring constantly, until they are soft and transparent, which should take about 5 minutes. Introduce the second half of the garlic and cook for another 30 seconds.
  • Combine roma tomatoes, dried parsley, ras el hanout, and water in a pot. Simmer until tomatoes are soft, approximately 5 minutes. Pour the flavorful tomato sauce over the meatballs and enjoy!
