Loaded potato salad with sour cream, bacon, and shredded cheese, a delicious blend of loaded baked potatoes and classic potato salad.
Ingredients:
  • 6 cups cubed russet potatoes
  • 1 cup sour cream
  • 1 cup creamy salad dressing (such as Miracle Whip®)
  • 0.5 teaspoon coarse ground black pepper
  • 1 cup shredded Cheddar cheese
  • 0.5 cup chopped green onions
  • 0.5 cup real bacon bits
Instructions:
  • Place the potatoes in a pot and cover them with water. Add salt and bring to a boil. Simmer until the potatoes are fork-tender, approximately 15 minutes. Drain and cool them under cold running water.
  • In a big bowl, combine sour cream, creamy salad dressing, and ground black pepper. Fold in Cheddar cheese, green onions, and bacon bits; gently mix in the potatoes. Refrigerate covered until ready to enjoy.
