Delicious apple yogurt scones topped with cinnamon sugar and sliced almonds.
Ingredients:
  • 2 cups all-purpose flour
  • 0.33333334326744 cup white sugar
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 6 tablespoons shortening, chilled
  • 2 apple - peeled, cored, and chopped
  • 1 egg, lightly beaten
  • 0.5 cup plain yogurt
  • 1 tablespoon milk
  • 1.5 teaspoons almond extract
  • 2 tablespoons cinnamon sugar
  • 0.25 cup sliced almonds
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and line a baking sheet with parchment paper.
  • Combine flour, sugar, baking powder, baking soda, and salt in a mixing bowl. Add shortening and blend with two forks or a pastry blender until the mixture resembles coarse cornmeal. Gently mix in chopped apples.
  • In a small bowl, vigorously whisk together 1 egg, yogurt, milk, and almond extract until smooth. Gently fold the egg mixture into the flour mixture until just combined. Transfer the dough to a lightly floured surface and knead 4 to 5 times. Shape the dough into a 7-inch circle that's 1 1/2 inches thick. Cut the dough into 8 wedges and arrange them on a baking sheet.
  • Create a luscious topping by combining milk and 1 egg in a small bowl. Gently brush the scones with this mixture, then sprinkle them with cinnamon sugar and almonds for a delightful finish.
  • Bake in a preheated oven until the tops are golden brown and a toothpick inserted in the center comes out clean, approximately 20 minutes. Then, cool on a wire rack and serve warm or at room temperature.
