Almond Chocolate Chip Pumpkin Bread

Bake a festive almond chocolate chip pumpkin bread for entertaining or gifting during the holidays.
Ingredients:
  • 1.3333333730698 cups white sugar
  • 1 cup canned pumpkin puree
  • 0.5 cup vegetable oil
  • 2 eggs
  • 1.5 tablespoons molasses
  • 1.6666667461395 cups all-purpose flour
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 1 cup toasted almond slices, divided
  • 0.5 cup miniature semisweet chocolate chips, divided
Instructions:
  • Preheat the oven to a toasty 350 degrees F (175 degrees C). Get your loaf pan ready by greasing and flouring it.
  • In a large bowl, combine sugar, pumpkin, vegetable oil, eggs, and molasses until creamy. In a separate bowl, whisk together flour, baking powder, baking soda, salt, nutmeg, cinnamon, and ground ginger. Add the flour mixture to the pumpkin mixture and mix until well-combined.
  • Mix 2/3 of the almonds and 3/4 of the chocolate chips into the batter. Transfer the batter into the loaf pan and sprinkle the rest of the almonds and chocolate chips over the top of the loaf before baking.
  • Bake in the oven until a toothpick inserted in the center comes out clean, approximately 45 minutes to 1 hour.
