Indulge in delicious almond coconut muffins with chocolate chips for a satisfying breakfast.
Ingredients:
  • 2 cups all-purpose flour
  • 0.25 cup stevia
  • 2.5 teaspoons baking powder
  • 1 cup sour cream
  • 0.5 cup butter, melted
  • 2 eggs
  • 0.5 teaspoon almond extract
  • 1 cup flaked coconut
  • 0.5 cup semisweet chocolate chips
  • 0.5 cup sliced almonds
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and grease a 12-cup muffin tin.
  • In a bowl, mix flour, sugar, stevia, baking powder, and salt. In a separate bowl, whisk together sour cream, butter, and eggs until combined. Gently fold the wet ingredients into the dry ingredients until just moistened. Add coconut and chocolate chips to the batter. Fill muffin cups 2/3 full with batter and sprinkle sliced almonds on top.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted in the center comes out clean. Then, cool the muffins in the tin for 5 minutes before transferring to a wire rack.
