Almond-Oatmeal Crispies

Award-winning 2008 recipe for quick and easy homemade almond lover's cookies.
Ingredients:
  • 1/2 cup butter or margarine, softened
  • 1 package (7 or 8 oz) almond paste (not marzipan)
  • 1 egg
  • 1 pouch (17.5 oz) Betty Crocker™ Oatmeal Cookie Mix
  • 1 tablespoon water
  • 24 unblanched whole almonds
  • 1/2 cup powdered sugar
  • 1/4 teaspoon almond extract
Instructions:
  • Preheat the oven to 375°F. In a large bowl, use an electric mixer on medium speed to blend the butter and almond paste until smooth. Add the egg and mix well. Fold in the cookie mix and 1 tablespoon of water until a soft dough forms.
  • Using a 2-tablespoon cookie scoop, place dough on ungreased cookie sheets 2 inches apart. Press one almond into the center of each mound of dough.
  • Bake until edges turn light golden brown, which should take about 12 to 14 minutes. Let cool for 1 minute before transferring from cookie sheets to a cooling rack. Allow to cool completely, which will take about 15 minutes.
  • Combine icing ingredients in a small bowl until silky smooth. Generously drizzle the icing over the cookies.
