Strawberry-Orange Oatmeal Bars

Strawberry-orange filling on a coconut-almond-oatmeal crust with maple syrup sweetener. Delicious fruity bars!
Ingredients:
  • cooking spray
  • 1 cup rolled oats
  • 0.75 cup whole wheat flour
  • 0.75 cup shredded sweetened coconut
  • 0.5 cup sliced almonds
  • 1 teaspoon ground ginger
  • 0.5 teaspoon kosher salt
  • 0.5 cup maple syrup
  • 6 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 3 cups sliced fresh strawberries
  • 3 tablespoons maple syrup, or as needed
  • 1.5 tablespoons cornstarch
  • 1 tablespoon orange juice
  • 0.25 teaspoon grated orange zest
Instructions:
  • Preheat the oven to 375°F (190°C). Line an 8x8-inch baking pan with parchment paper, allowing it to hang over the edges. Lightly coat the parchment with cooking spray.
  • Combine oats, whole wheat flour, coconut, almonds, ginger, and salt in a large bowl. Add 1/2 cup maple syrup, melted butter, and vanilla extract. Mix until well combined. Set aside 1 cup of the mixture for topping. Press remaining mixture firmly into the prepared pan.
  • In a bowl, mix together strawberries, 3 tablespoons of maple syrup, cornstarch, orange juice, and orange zest until well combined and no dry lumps of cornstarch remain. Spread the strawberry mixture evenly over the crust.
  • Sprinkle the remaining crust mixture over the strawberries and gently press it into the strawberries.
  • Bake in the preheated oven for 45 to 50 minutes, until the top is golden brown and strawberries are bubbling. Let it cool completely in the pan, then use parchment "handles" to remove from the pan and slice into bars.
