Strawberry Orange Creamsicle Jam

Delicious strawberry orange jam with a creamsicle twist, perfect for spreading on toast or biscuits.
Ingredients:
  • 3 cups crushed strawberries
  • 0.66666668653488 cup frozen orange juice concentrate
  • 0.25 cup orange liqueur
  • 6 cups white sugar
  • 1 (3 ounce) pouch liquid fruit pectin
  • 1.5 teaspoons vanilla extract
  • 1 orange, zested
  • 7 half pint canning jars with lids and rings
Instructions:
  • In a large pot, mix strawberries, orange juice concentrate, and orange liqueur. Stir in sugar until dissolved. Bring to a boil while stirring constantly. Add pectin, vanilla extract, and orange zest. Boil for 1 minute. Remove from heat and skim off foam with a spoon.
  • Place jars and lids in boiling water for a minimum of 5 minutes to sterilize. Fill hot, sterilized jars with jam, leaving 1/4 inch of space at the top. Use a knife or thin spatula to remove air bubbles by running it along the inside of the jars. Wipe rims clean with a damp paper towel to remove any residue. Seal with lids and screw on tightly.
  • Fill a large stockpot halfway with water and place a rack at the bottom. Bring the water to a boil. Using a holder, carefully lower the jars into the pot, leaving a 2-inch space between them. Add more boiling water if needed to ensure the jars are covered by at least 1 inch of water. Cover the pot, bring the water back to a rolling boil, and process for 5 minutes.
  • Place the jars on a cloth-covered or wood surface, separated by a few inches, until they cool. Press the top of each lid with a finger to check for a tight seal. Store in a cool, dark place.
