Elevate classic strawberry jam with fresh oranges and zesty orange peel for a delightful family treat.
Ingredients:
  • 4 pints fresh strawberries
  • 2 oranges
  • 4 cups white sugar
  • 1 (1.75 ounce) package fruit pectin (such as Sure-Jell® Pectin Light for less or no sugar)
Instructions:
  • Check 8 half-pint jars for cracks and rings for rust, getting rid of any that are defective. Keep them in simmering water until the strawberry jam is done. Clean new, unused lids and rings in warm soapy water.
  • In a bowl, gently wash, remove the hulls, and crush the strawberries. Measure the berries; you should have approximately 5 cups.
  • Thoroughly wash oranges under hot running water, then dry them with paper towels. Grate the zest into a bowl. Peel oranges, removing all white pith, then separate into segments, discarding any membranes and seeds. Finely chop the oranges and add them to the zest in the bowl.
  • In a large pot, combine crushed strawberries and orange zest over medium heat. Mix in pectin and heat until boiling. Add sugar and stir until dissolved. Boil vigorously for 1 minute, stirring constantly. Remove any foam from the top using a ladle.
  • Spoon the luscious strawberry jam into the jars, leaving a 1/4 inch gap at the top. Glide a knife or spatula along the edges to eliminate air bubbles. Freshen up the rims with a damp paper towel to clean any drips. Seal with lids and secure them tightly with rings.
  • Fill a large stockpot halfway with water and bring it to a boil with a rack placed at the bottom. Lower jars into the boiling water using a holder, ensuring they are 2 inches apart. Add more boiling water if needed to cover the jars by at least 1 inch. Cover the pot, bring to a rolling boil, and process for 10 minutes.
  • After removing the jars from the stockpot, place them on a cloth-covered or wood surface a few inches apart. Allow them to cool undisturbed for 24 hours. Press the center of each lid lightly with your finger to check for a secure seal. Once confirmed, remove the rings, then store the jars in a cool, dark place.
