Brighten strawberry jam with fresh orange juice and zest, thickened deliciously with chia seeds instead of pectin.
Ingredients:
  • 1 pound fresh strawberries, hulled and roughly chopped
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons white sugar
  • 0.25 teaspoon grated orange zest
  • 2 tablespoons chia seeds
  • 1 (8 ounce) jar with lid
Instructions:
  • In a medium saucepan over medium heat, combine strawberries, orange juice, sugar, and orange zest. Bring to a boil, then reduce heat to medium-low and simmer for 10 minutes, stirring occasionally.
  • Stir in chia seeds and cook until jam thickens, around 5 minutes. Use a potato masher to smooth out any large pieces for a silky texture. Let it cool completely as the jam will thicken further. Transfer to a jar and refrigerate.
