Strawberry-Orange Spread

Ingredients:
  • 2 packages (10 ounces each) frozen strawberries, thawed
  • 1 package (1 3/4 ounces) powdered fruit pectin
  • 1 tablespoon grated orange peel
  • 3 1/2 cups sugar
  • 1/2 cup orange juice
Instructions:
  • In a 3-quart saucepan, combine strawberries, pectin, orange peel, and orange juice until the pectin dissolves. Bring to a vigorous boil over high heat for about 2 minutes, stirring continuously. Add sugar and continue stirring until it reaches a rolling boil, then remove from heat.
  • Remove any foam that forms on the surface. Quickly transfer the jam to a hot, sterilized jar, leaving 1/4-inch of space at the top, or into freezer containers, leaving 1/2-inch of space at the top. Clean the edges of the jars or containers and seal them. Allow the jam to sit at room temperature for about 24 hours until it sets. Refrigerate or freeze for up to 3 months.
