Delicious strawberry jam slice with zesty orange icing - ideal for a delightful afternoon treat.
Ingredients:
  • 300g butter, cubed, melted
  • 300g (1 1/3 cups) caster sugar
  • 2.20 gm vanilla extract (or vanilla essence)
  • 4 eggs, at room temperature, lightly whisked
  • 300g (2 cups) plain flour, sifted
  • 1 small orange, rind finely grated, juiced
  • 245g (3/4 cup) strawberry jam
  • 195g (1 1/4 cups) pure icing sugar
  • 1 orange, rind finely grated
  • 20.00 gm hot water
Instructions:
  • Preheat the oven to 180°C. Grease a 16 x 26cm slab pan with melted butter and line the base with non-stick baking paper.
  • In a medium bowl, use electric beaters to whip together the remaining butter, sugar, vanilla extract (or essence), and eggs until thoroughly mixed.
  • Gently incorporate the flour, orange zest, and freshly squeezed orange juice into the creamy butter mixture using a sturdy metal spoon until fully blended.
  • Spread half of the mixture in the prepared pan. Scatter spoonfuls of jam on top. Add the rest of the mixture and spread evenly to cover.
  • Bake in a preheated oven for 40-45 minutes until the slice pulls away from the sides of the pan and the center is firm. Allow to cool completely, then invert onto a wire rack and peel off the paper.
  • For the orange icing, sift icing sugar into a bowl. Mix in orange rind and water until smooth. Spread over the cooled slice and let it set for 30-45 minutes. Cut into 16 pieces.
