Chocolate-dipped peanut butter biscotti, a coffee's best companion.
Ingredients:
  • 0.25 cup milk
  • 1.5 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 cup crunchy peanut butter (such as Jif® Extra Crunchy)
  • 0.5 cup dark brown sugar
  • 3 eggs
  • 1.5 cups peanut butter chips
  • 1 (12 ounce) bag semisweet chocolate chips
Instructions:
  • Preheat the oven to 350°F (175°C) for a perfect bake.
  • Prepare two baking sheets by lining them with parchment paper.
  • Combine the milk and vanilla extract in a small bowl; let sit.
  • In a separate bowl, mix the flour and baking powder together.
  • Blend the peanut butter, brown sugar, and white sugar together using an electric mixer in a large bowl until creamy.
  • Incorporate the eggs individually into the peanut butter mixture, ensuring each one is fully blended before adding the next.
  • Add the flour mixture and milk in alternating batches, mixing until just combined.
  • Gently incorporate the peanut butter chips until evenly mixed.
  • Divide the dough into 4 equal portions.
  • Shape each portion into a 4x5-inch rectangle with a thickness of about 1/2-inch.
  • Place the dough pieces onto the lined baking sheets.
  • Bake until firm to the touch in the preheated oven for approximately 25 minutes.
  • Cool the biscotti loaves on wire racks.
  • Lower the oven temperature to 300 degrees F (150 degrees C).
  • Slice each loaf into 1/2-inch pieces.
  • Place the slices back on the baking sheets, cut sides facing up.
  • Bake the biscotti in the oven until they are perfectly dry, flipping them over once after 10 minutes.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  • Melt chocolate chips in a microwave-safe bowl in 30-second intervals, stirring each time, until smooth, for 1 to 3 minutes.
  • Dip the cooled biscotti into the melted chocolate, then place on parchment paper to set for about 20 minutes.
