Indulge in decadent homemade eggnog with rich flavors of rum, spices, and creamy goodness.
Ingredients:
  • 4 cups milk
  • 1 teaspoon ground cinnamon
  • 5 whole cloves
  • 2.5 teaspoons vanilla extract, divided
  • 12 large egg yolks
  • 1.5 cups white sugar
  • 4 cups light cream
  • 2.5 cups light rum
  • 0.5 teaspoon ground nutmeg
Instructions:
  • Assemble all your ingredients.
  • In a saucepan over low heat, gently mix together milk, cinnamon, 1/2 teaspoon of vanilla, and cloves. Warm the mixture for 5 minutes. Increase heat to medium-low and carefully bring to a boil. Take off the heat.
  • In a large bowl, whisk the egg yolks until they turn a pale yellow color. Add the sugar and continue whisking until the mixture becomes light and fluffy.
  • Slowly drizzle the hot milk mixture into the egg yolk mixture while whisking vigorously to create a smooth blend. Keep adding the hot milk gradually while whisking until fully combined.
  • Return the mixture to the saucepan. Cook over medium heat, stirring constantly, until thickened, about 3 minutes. Avoid boiling the mixture.
  • After straining to remove cloves, chill for about 1 hour, then blend in cream, rum, remaining 2 teaspoons of vanilla, and nutmeg. Refrigerate until serving time, ideally 8 hours to overnight.
