Impress with a moist citrus cake topped with coconut snow.
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ White Cake Mix
  • Water, vegetable oil and egg whites called for on cake mix box
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 1/2 cup flaked coconut
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 1/3 cup water
  • 1 teaspoon grated orange peel
  • 2 teaspoons orange juice
  • 2 tablespoons flaked coconut
Instructions:
  • Preheat the oven to 350°F (or 325°F for dark or nonstick pans) and prepare the cake batter according to the instructions on the box. Bake in two 8-inch or 9-inch round pans as directed and let the cakes cool.
  • For the orange-coconut filling, combine sugar and cornstarch in a small microwavable bowl. Slowly mix in 1/3 cup water. Add orange peel and orange juice. Microwave on High for about 1 minute until the mixture thickens and boils. Stir well. Microwave for an additional 30 seconds, stirring every 15 seconds. Mix in 2 tablespoons of coconut and allow it to cool.
  • Spread orange-coconut filling between cake layers. Frost entire cake with frosting and generously sprinkle 1/2 cup coconut over the top. Store covered loosely.
