Create ambrosia salad: blend fruit, whipped cream, marshmallows, and almonds for a nostalgic treat.
Ingredients:
  • 1 cup shredded sweetened coconut
  • 1 (15-ounce) can mandarin oranges, drained
  • 1 (15-ounce) can pineapple chunks, drained
  • 1/2 cup maraschino cherries, halved
  • 3 cups mini marshmallows
  • 1 apple (any kind will do), peeled and chopped
  • 1/4 cup slivered almonds
  • For the whipped cream dressing:
  • 1 cup heavy whipping cream
  • 1/4 cup sour cream
  • 2 tablespoons sugar
Instructions:
  • Toast the coconut in a dry medium skillet over medium-low heat until fragrant and light brown, stirring regularly to prevent burning. Watch closely, as it can quickly turn brown in 2 to 3 minutes. This step is optional but enhances the coconut's flavor.
  • Combine the toasted coconut with the orange segments, pineapple chunks, cherries, mini marshmallows, apples, and almonds in a bowl. Mix until well combined.
  • Prepare the whipped cream dressing: In a stand mixer with a whisk attachment or using a hand mixer, beat heavy whipping cream on high for 2 to 3 minutes until it begins to thicken. Add sour cream and sugar, then whip until the mixture is smooth yet forms firm peaks. Avoid overmixing.
  • Incorporate the whipped cream mixture gently into the fruit and nut mixture.
