Cookies filled with oats, dates, raisins, coconut, and pecans - a delightful family treat.
Ingredients:
  • 2 cups Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 cup butter or margarine, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups quick-cooking oats
  • 1 teaspoon grated orange peel
  • 1 cup chopped dates
  • 1 cup golden raisins
  • 1 cup flaked coconut
  • 1 cup chopped pecans
Instructions:
  • Preheat oven to 375°F and lightly coat cookie sheets with cooking spray.
  • Combine flour, baking powder, baking soda, and salt in a medium bowl; set aside. In a large bowl, cream butter with an electric mixer until smooth. Gradually mix in granulated sugar and brown sugar until well combined. Add eggs one at a time, incorporating each one thoroughly. Stir in vanilla. On low speed, blend in the flour mixture just until combined.
  • Add oats, orange peel, dates, raisins, coconut, and pecans to the mixture. Use a teaspoon to drop the dough onto cookie sheets, ensuring they are placed 2 inches apart.
  • Bake for 8 to 10 minutes until golden. Transfer cookies from sheets to cooling racks.
