Delicious fruit salsa, perfect with dessert or dinner.
Ingredients:
  • 4 red grapefruit (4 lb)
  • 4 navel oranges (3 lb)
  • 1 cup pomegranate seeds
  • 1/2 cup flaked coconut, toasted
  • 2 tablespoons chopped crystallized ginger
  • 2 tablespoons fresh lime juice
  • 2 tablespoons light agave nectar or honey
Instructions:
  • Carefully peel the grapefruit and oranges down to the flesh, making sure to remove all the white pith. Using a sharp knife, cut the segments straight down between the walls of the membrane. Take out the segments gently and set aside 1/4 cup of combined grapefruit and orange juice. Chop the fruit segments.
  • Combine the chopped orange and grapefruit, along with their juices, pomegranate seeds, coconut, ginger, lime juice, and agave nectar in a large bowl. Enjoy right away or chill until ready to serve.
