Zesty Dijon anchovy vinaigrette elevates salads, veggies, chicken, and seafood with bold flavors.
Ingredients:
  • 2 flat anchovy fillets
  • 1 small clove garlic, minced
  • 2 teaspoons Dijon mustard
  • 2 tablespoons white wine or champagne vinegar
  • 1/3 cup extra-virgin olive oil
Instructions:
  • Prepare anchovies: Stack them on a cutting board and finely slice with a chef’s knife. Mash with a fork into a paste on the board, then transfer to a small bowl.
  • Prepare the salad dressing by combining minced garlic, anchovies, mustard, and vinegar in a bowl. Slowly whisk in the olive oil until the dressing emulsifies smoothly. Place a towel under the bowl to keep it stable if needed.
  • Enjoy freshly made or store any leftovers in an airtight container in the fridge for up to one week. If it solidifies, let it come to room temperature for 30 minutes before using.
