Quick and easy Angel Hair Pasta with Fresh Cherry Tomato Sauce - ready in just 20 minutes and bursting with summer flavors!
Ingredients:
  • 2 1/2 teaspoons kosher salt
  • 1 pounds angel hair pasta (capellini or capelli d’Angelo), or another thin spaghetti
  • 4 tablespoons olive oil
  • 2 pints red and yellow cherry tomatoes
  • 1/2 teaspoon crushed red pepper
  • 1/4 teaspoon freshly ground black pepper
  • 2 cloves garlic, very thinly sliced
  • 1 cup fresh basil leaves, removed from the stems
  • 1 cup grated Parmesan cheese
Instructions:
  • Cook the pasta by boiling a large pot of salted water. Add the pasta, stir until boiling, and cook for 3 to 4 minutes until tender. Reserve 1/2 cup of pasta water. Drain the pasta, then transfer to a bowl and toss with 1 tablespoon of oil.
  • Prepare the tomatoes by poking small whole tomatoes with a skewer or the tip of a paring knife. Cut larger tomatoes in half if needed.
  • Prepare the sauce: Heat 3 tablespoons of oil in a deep skillet over medium-high heat. Carefully add the cherry tomatoes, watch out for splattering, and season with 1/2 teaspoon salt, red pepper, and black pepper. Cook for 2 to 3 minutes until the tomatoes soften and release juices. Stir in the garlic and cook for an additional 2 minutes.
  • Coat the pasta with the sauce by adding the pasta and 1/4 cup of pasta water to the skillet with the tomato sauce. Toss thoroughly, adding more pasta water a tablespoon at a time as needed to create a sauce that coats the pasta. Finish by tossing in half of the basil leaves.
  • Serve by individually portioning the pasta into large bowls, garnishing each with fresh basil leaves, and generously sprinkling with Parmesan cheese.
