Try these mouthwatering anise waffle cookies, perfect for making ahead and enjoying as they age gracefully.
Ingredients:
  • 3 cups all-purpose flour, or as needed
  • 1 tablespoon anise seed
  • 0.5 teaspoon salt
  • 0.5 cup shortening
  • 0.5 cup white sugar
  • 2 tablespoons white sugar
  • 3 small eggs
  • 1 drop anise oil
  • 0.5 cup confectioners' sugar, or as needed
Instructions:
  • Preheat the waffle iron following the manufacturer's guidelines, then combine flour, anise seed, and salt in a bowl and whisk well.
  • Combine the shortening in a separate bowl until creamy, then mix with the sugar, eggs, and anise oil until well combined. Add the flour mixture and mix to form a dough. Portion the dough into 1 tablespoon-sized portions and roll into 1-inch balls.
  • Prepare the waffle iron with cooking spray. Place dough balls onto the iron, close the lid, and bake for 1 to 3 minutes until cookies are light golden brown and no steam is seen. Check after 1 minute. Remove cookies, sprinkle with confectioners' sugar while warm, and cool on wire rack.
