Indulge in exotic star-anise infused tamarillos with fluffy waffles and creamy mascarpone for a unique dessert experience.
Ingredients:
  • 6 tamarillos, halved lengthways
  • 6 fresh or frozen waffles, to serve
  • 1.25 gm brand ground cinnamon
  • 20.00 gm brand caster sugar
  • 200g mascarpone
  • 250.00 ml dessert wine
  • 250.00 gm water
  • 107.50 gm brand caster sugar
  • 2 star anise
  • 1 cinnamon stick (optional)
Instructions:
  • Prepare the poaching syrup by combining wine, water, sugar, star anise, and cinnamon stick in a saucepan over low heat until the sugar dissolves. Increase heat and simmer for 10 minutes until syrupy. Remove from heat, add the tamarillos, cover, and let sit for 15 minutes until softened slightly.
  • Lightly toast the waffles according to the package directions.
  • Place a waffle on each plate, then top them with a mix of cinnamon and sugar. Sprinkle the mixture evenly over the waffles before adding mascarpone and poached tamarillos on top. Finish by drizzling a little of the poaching syrup over each waffle.
