Spiced pears: a delightful winter dessert for Christmas in July or any occasion.
Ingredients:
  • 500ml (2 cups) dry red wine
  • 70g (1/3 cup) caster sugar
  • 2 whole star anise
  • 2 x 7cm cinnamon sticks
  • 1 vanilla bean, split
  • 4 just-ripe packham's triumph pears, peeled
  • 1 x 250g ctn mascarpone
  • 24.00 gm icing sugar mixture
  • 2 tsp rosewater
Instructions:
  • In a saucepan over medium heat, mix together the wine, sugar, star anise, cinnamon, and vanilla bean. Stir for 2 minutes until sugar dissolves. Add the pears and bring to a boil. Reduce heat and simmer for 1 hour until the pears are tender. Using a slotted spoon, transfer pears to a heatproof bowl.
  • Turn up the heat to high and let the syrup come to a boil. Cook for 10 minutes, stirring occasionally, until the syrup thickens slightly. Drizzle over the pears and let it cool for 10 minutes. Cover with plastic wrap and refrigerate for 4 hours to chill.
  • Combine mascarpone, icing sugar, and rosewater in a medium bowl, stirring until mixed well.
  • Transfer the pears to a serving dish, gently drizzle with syrup, and enjoy with rosewater mascarpone.
