Spiced poached pears

Ingredients:
  • 220g (1 cup) caster sugar
  • 375ml (1 1/2 cups) red wine
  • 2 cinnamon sticks
  • 2 bay leaves
  • 1 vanilla bean, split
  • 4 firm pears, peeled, halved, cored
Instructions:
  • Combine the sugar, wine, cinnamon, bay leaves, and vanilla in a pan and bring to a gentle simmer.
  • Place the pears in the pot and add sufficient water to cover them. Simmer for 15-20 minutes, or until the pears are just tender, adjusting the time based on their ripeness.
  • Take out the pears, simmer the liquid until it's reduced by half, and then drizzle it over the pears. Chill until you're ready to enjoy.
