Aperol gin punch

Serve up a delightful and refreshing Aperol punch to keep the party going.
Ingredients:
  • 141.90 gm caster sugar
  • 2 x 10cm strips orange rind
  • 250.00 ml gin
  • 173.25 gm lime juice
  • 2 oranges, peeled, sliced crossways
  • 187.50 ml Aperol aperitif
  • 750.00 ml chilled soda water
  • 1000.00 ml crushed ice
  • 250.00 ml fresh mint sprigs
  • Lime slices, to serve
Instructions:
  • In a small saucepan over medium heat, combine sugar, orange rind, and 1/2 cup water. Stir until the sugar dissolves. Bring to a simmer and let it simmer for 2 minutes. Allow it to cool completely.
  • Combine the sugar mixture, gin, lime juice, orange slices, Aperol, soda water, ice, mint, and extra lime slices in a large jug. Stir well and serve.
