Apple and ginger galettes

Easy apple and ginger tart in buttery crust.
Ingredients:
  • 2 sheets sweet shortcrust pastry, thawed (see Notes)
  • 3 red delicious apples
  • 1/2 lemon, juiced
  • 20.00 ml ginger, grated
  • 17.20 gm demerara sugar or raw sugar, plus extra to sprinkle
  • 1 egg, lightly beaten
  • 20.00 gm water
  • Vanilla custard, to serve
Instructions:
  • Preheat your oven to 180C and prepare a large baking tray by lining it with baking paper.
  • Cut four 14cm rounds from the pastry and lay them on a baking tray. Core the apples and slice them thinly into wedges. Mix the apple wedges in a bowl with lemon, ginger, and sugar. Spoon the apple filling onto the center of each pastry round, leaving a 3cm border. Fold the pastry edges over to partially cover the filling, gently pressing down to seal.
  • In a bowl, whisk together the egg and water. Brush the pastry edges with the egg wash and sprinkle with extra sugar. Bake for 25 minutes or until golden. Serve warm with custard.
