Whip up these irresistible apple oat muffins for a kid-approved breakfast treat!
Ingredients:
  • Olive oil, for greasing
  • 225g (1 1/2 cups) self-raising flour
  • 140g (1 1/4 cups) rolled oats
  • 4.00 gm baking powder
  • 2 egg whites
  • 250mls (1 cup) apple sauce
  • 60mls (1/4 cup) honey
  • 60mls (1/4 cup) light olive oil
Instructions:
  • Preheat your oven to 180°C and lightly brush 12 medium 80mls (1/3-cup) muffin pans with olive oil.
  • In a large bowl, mix together the flour, oats, baking powder, and cinnamon.
  • In a medium bowl, gently whisk the egg whites until frothy. Mix in the apple sauce, honey, and olive oil until well combined. Gently fold the apple mixture into the flour mixture using a large metal spoon until just combined; the mixture should be slightly lumpy. Avoid overmixing.
  • Evenly divide the mixture into the greased muffin pans and bake in the preheated oven until golden and fully cooked, about 15 minutes, or until a skewer comes out clean when tested.
  • After baking, allow the muffins to rest for 2-3 minutes before gently transferring them to a wire rack. Enjoy them warm or at room temperature.
