Bake up a cozy Apple Bread with aromatic cinnamon and baked apples - a delightful and simple treat for your kitchen.
Ingredients:

  • For the streusel
  • 1/4 cup (50 g) brown sugar
  • 1/4 cup (50 g) granulated sugar
  • 1/4 cup (30 g) all-purpose flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted
  • For the apple bread
  • 1 1/2 cups (180 g) all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup (150 g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup plain, unsweetened Greek yogurt
  • 1/3 cup whole milk
  • 1 large Granny Smith, Honeycrisp, or Golden Delicious apple, peeled and diced
Instructions:
  • Preheat the oven to 350°F. Grease a 9x5-inch loaf pan and line it with parchment paper, leaving a 1-inch overhang on the long sides for easy removal.
  • Prepare the streusel topping by mixing brown sugar, granulated sugar, flour, cinnamon, and salt in a bowl. Drizzle melted butter over the dry ingredients, mixing with a fork until a crumbly dough forms. Set aside.
  • Combine flour, baking powder, baking soda, salt, and cinnamon in a medium bowl and set aside.
  • Whip up a dreamy mixture by beating the butter and sugar until light and fluffy. Stir in the egg, vanilla extract, yogurt, and milk until smooth and creamy using a hand or stand mixer.
  • Mix the wet and dry ingredients: Pour the dry ingredients into the wet ingredients. Beat everything together, starting on low and increasing to medium speed for 1-2 minutes, until a smooth batter forms without any lumps.
  • Incorporate diced apples into the batter by gently folding them in with a rubber spatula.
  • Gently transfer the batter into the loaf pan, ensuring it's evenly spread. Sprinkle the delectable streusel over the top for the perfect finishing touch.
  • Bake until golden-brown and a toothpick inserted in the center comes out clean, 45-50 minutes.
  • Allow the apple bread to cool in the pan for 10-15 minutes, then effortlessly lift it out using the parchment overhang and transfer it to a wire rack. Let it rest for another 5-10 minutes before slicing and serving.
