Tangy buttermilk and sweet-spicy cinnamon make these apple scones crunchy outside, soft inside.
Ingredients:
  • 0.5 cup confectioners' sugar
  • 2.6666667461395 cups all-purpose flour
  • 0.25 cup brown sugar
  • 4 teaspoons baking powder
  • 0.5 teaspoon salt
  • 6 tablespoons frozen unsalted butter
  • 1 cup whole buttermilk
  • 1 large egg
  • 1.25 cups tart apples - peeled, cored, and cut into 1/2-inch cubes
  • 2 tablespoons maple syrup
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon grated nutmeg
Instructions:
  • Preheat the oven to 400°F (200°C) and prepare a cookie sheet lined with parchment paper.
  • In a large bowl, combine flour, brown sugar, baking powder, cinnamon, and salt using a whisk until well blended.
  • Efficiently grate the cold butter into the flour mixture and delicately incorporate it using a fork until the mixture resembles coarse crumbs.
  • In a small bowl, whisk together the buttermilk and egg. Pour the mixture over the flour and lightly combine using a spatula until just moist. Gently fold in the chopped apples until the dough just comes together, using your hands if needed. Be careful not to over mix.
  • On a lightly floured surface, shape the dough into two 5-inch circles. Cut each circle into 6 wedges using a bench scraper or knife coated with cooking spray. Arrange the wedges on the baking sheet, making sure they are not touching.
  • Bake in the preheated oven until lightly golden brown, approximately 15 minutes. Then, let it cool on a wire rack for around 30 minutes.
  • Combine confectioners' sugar, maple syrup, and cinnamon, whisking until a velvety glaze forms. Drizzle generously over scones and top with grated nutmeg for a finishing touch.
