Light and fluffy apple muffins made irresistible with buttermilk.
Ingredients:
  • 150.00 gm self-raising flour
  • 187.50 ml plain flour
  • 50.00 gm traditional rolled oats
  • 53.75 gm caster sugar
  • 60g butter, melted, cooled
  • 390.00 gm buttermilk
  • 1 egg, lightly beaten
  • 4.40 gm vanilla essence
  • 2 green apples, peeled, grated
  • 8.00 gm brown sugar
  • 2.50 gm ground cinnamon
Instructions:
  • Preheat the oven to 190°C (170°C fan-forced) and line a 12-hole muffin pan with paper cases that hold 1/3 cup each.
  • In a large bowl, mix together the flours, oats, and sugar. Create a hole in the middle of the mixture, then add the butter, buttermilk, egg, and vanilla. Stir until just combined, then gently fold in the apple.
  • Divide the mixture into the paper cases. Mix brown sugar and cinnamon in a bowl and sprinkle over the muffins. Bake for 20-22 minutes until golden and slightly firm. Let them rest in the pan for 5 minutes, then cool on a wire rack before serving.
