Apple muffins with whipped butter recipe

Apple muffins topped with whipped butter are perfect for lunch boxes and steal the spotlight at afternoon tea!
Ingredients:
  • 160g muesli
  • 220g brown sugar
  • 360g self-raising flour
  • 4.38 gm ground cinnamon
  • 100g Organic Salted Butter, melted
  • 1 Free Range Egg
  • 330ml buttermilk
  • 1 large Granny Smith apple, peeled, cored, finely chopped
  • 150g Organic Salted Butter, extra, softened
  • Icing sugar, to dust (optional)
Instructions:
  • Preheat your oven to 180°C and line 8 holes in two ⅔-cup (160ml) Texas muffin pans with paper cases.
  • Set aside ½ cup (65g) muesli and 2 tablespoons of sugar. Mix the remaining muesli and sugar with flour and 1½ teaspoons of cinnamon in a large bowl, creating a well in the center. In a separate jug, whisk together the butter, egg, and buttermilk, then add this mixture to the flour along with the apple. Gently stir until just combined, being careful not to overmix. Divide the batter among paper cases.
  • Mix the muesli and sugar with 2 tsp water in a bowl. Sprinkle over the muffins and bake for 30-35 mins until a skewer comes out clean. Allow to cool in the pans for 5 mins before transferring to a wire rack.
  • In a bowl, cream together the remaining cinnamon, extra butter, and honey using an electric mixer for 5 minutes or until creamy. Optionally, dust muffins with icing sugar and serve with the delicious butter mixture.
