Elevate basic muffin batter with your favorite flavors like blueberries and lemon zest or apples and cinnamon.
Ingredients:
  • 2.25 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground nutmeg
  • 1 egg, lightly beaten
  • 1 cup buttermilk
Instructions:
  • Preheat your oven to 375 degrees F (190 degrees C) and prepare a 12-cup muffin tin by greasing it or lining it with paper liners.
  • Combine the flour, sugar, baking soda, baking powder, salt, and nutmeg in one bowl. In another bowl, mix melted butter, egg, buttermilk, and vanilla.
  • Combine the buttermilk mixture with the dry ingredients and stir until just combined (the batter will be slightly lumpy). Add fruit if desired, and gently fold in.
  • Using a scoop, fill the muffin tins almost to the top with the prepared batter. Bake in the preheated oven for approximately 18 minutes, or until the tops are golden and spring back when lightly pressed.
