Try these mouthwatering scones for a perfect morning treat.
Ingredients:
  • 300.00 gm self-raising flour
  • 20.00 gm caster sugar
  • Pinch of salt
  • 60g butter, chilled, chopped
  • 195.00 gm buttermilk
  • Extra buttermilk, for brushing
  • Raspberry jam, to serve
  • Whipped cream, to serve
Instructions:
  • Preheat your oven to 220C/200C fan-forced. Line a baking tray with parchment paper and place it in the top half of the oven.
  • In a bowl, sift together flour, sugar, and salt. Add butter and use your fingertips to gently rub the butter into the dry ingredients until it resembles fine breadcrumbs.
  • Create a crater in the middle of the mixture and pour in the buttermilk. Mix with a knife until a sticky dough comes together. Transfer the dough to a lightly floured surface. Knead gently until it becomes smooth.
  • Roll dough to 2cm thickness using a lightly floured rolling pin. Use a 6cm round cutter to cut out scones, reshaping leftover dough as needed to create 12 scones.
  • Arrange the scones closely together on the baking tray. Brush them with buttermilk. Bake for 12 to 15 minutes until they turn golden and sound hollow when tapped. Enjoy with jam and cream.
