Whip up a simple yet delicious apple cake for a taste of home-baked goodness.
Ingredients:
  • 125g butter, chopped
  • 90.00 gm firmly packed brown sugar
  • 4.40 gm vanilla extract
  • 2 eggs
  • 150.00 gm self-raising flour
  • 125.00 ml plain flour
  • 193.13 gm milk
  • 2 small gala apples
  • 62.50 ml apricot jam
  • Double cream, to serve
Instructions:
  • 1. Preheat your oven to 180°C/160°C fan-forced and prepare a 6cm-deep, 20cm round springform pan by greasing it and lining the base with baking paper. 2. In a bowl, combine butter, sugar, and vanilla. 3. Use an electric mixer to beat the mixture for 5 to 6 minutes until light and creamy. 4. Add the eggs one by one, beating well after each addition.
  • Sift both flours over the creamy butter mixture, then pour in the milk. Gently fold until just combined. Transfer the batter into the prepared pan. Core and quarter the apples, then thinly slice them. Artfully arrange the apple slices in two concentric circles on top of the batter, pressing down lightly.
  • Bake for 35 to 40 minutes or until a skewer inserted in the center comes out clean. Let it rest in the pan for 10 minutes, then gently remove from the pan and transfer the cake to a wire rack to cool.
  • In a microwave-safe bowl, heat the jam for 30 seconds to 1 minute until it becomes runny. Brush the top of the cake with the warm jam and serve with cream.
