Apple cake with vanilla icing, ideal for the holidays. Enjoy with coffee.
Ingredients:
  • 3 cups all-purpose flour
  • 2.5 cups white sugar
  • 1 teaspoon baking soda
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground allspice
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 1 tablespoon pure vanilla extract
  • 4 cups sliced apples
  • 1.5 cups chopped pecans
  • 0.5 cup margarine
  • 1 cup brown sugar
  • 2 tablespoons all-purpose flour
  • 2 cups milk
Instructions:
  • Preheat your oven to a toasty 350 degrees F (175 degrees C) and generously grease and flour a beautiful fluted tube pan.
  • Combine 3 cups all-purpose flour with white sugar, baking soda, cinnamon, allspice, salt, cloves and nutmeg in a bowl.
  • In a big bowl, whisk eggs, then mix in vegetable oil, buttermilk, and 1 tablespoon of vanilla until smooth. Combine the egg mixture with the flour mixture using a large spoon. Gently fold in apples and pecans. Transfer the batter to the prepared pan.
  • Bake in the preheated oven for 60 to 75 minutes or until a knife inserted in the center comes out clean. Cool the cake in the pan.
  • In a saucepan over medium heat, melt margarine with brown sugar until sugar dissolves, about 5 minutes. Add flour and stir until combined. Mix in milk and vanilla, then cook until thickened, about 5 minutes.
  • Flip the cake onto a plastic cake carrier or container, then use a knife to poke holes all over. Pour hot icing all over the cake, making sure to pour any excess into the center. Let the cake absorb the icing overnight.
