Delicious apple cake with cinnamon, nutmeg, cream cheese frosting, and nut topping.
Ingredients:
  • 1.5 cups vegetable oil
  • 2 cups white sugar
  • 3 eggs, beaten
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 2.5 cups apples - peeled, cored and diced
  • 1 cup chopped walnuts
  • 1 cup raisins
  • 1 (16 ounce) container cream cheese frosting
  • 0.25 cup finely chopped walnuts
Instructions:
  • Preheat the oven to 325°F (165°C) and generously grease a 10-inch fluted tube pan, like a Bundt pan.
  • In a mixing bowl, whisk oil, eggs, vanilla, and sugar until well combined.
  • Combine the flour, baking soda, salt, cinnamon, and nutmeg through a sieve to remove any lumps. Mix into the beaten eggs, then gently fold in the apples, 1 cup of walnuts, and the raisins.
  • Transfer the mixture into the pan and bake in the preheated oven until a cake tester inserted in the center comes out clean, approximately 1 1/2 hours.
  • Frost the dish with luscious cream cheese icing. Sprinkle 1/4 cup of chopped walnuts over the top for a delightful crunch.
