Delicious spiced cake with fresh apples, coconut, nuts, and sweet glaze.
Ingredients:
  • Cake:
  • 1 1/2 cups vegetable oil
  • 2 cups of sugar
  • 3 eggs, slightly beaten
  • 3 cups of white flour
  • 1 1/2 teaspoon baking soda
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 3 cups chopped, peeled apples (varieties that are good for baking - i.e. Granny Smith, Gravenstein, Fuji)
  • 1 cup of sweetened shredded coconut
  • 1 cup of chopped nuts - walnuts or pecans
  • Glaze:
  • 1/2 stick sweet butter
  • 1 cup brown sugar
  • 3 tablespoons milk
Instructions:
  • Preheat the oven to 350°F while you generously grease and flour a bundt pan, setting it aside for later use.
  • Prepare the cake batter by blending the sugar and oil until smooth. Mix in the eggs. In a separate bowl, combine the flour, baking soda, salt and cinnamon. Gradually add the dry ingredients to the wet mixture, mixing well after each addition. Stir in the vanilla, apples, coconut, and chopped nuts.
  • Bake in a prepared Bundt pan, smoothing the top with a spatula. Insert a skewer in the center, and bake for 60-70 minutes until it comes out clean.
  • Lift from the pan and cool: Once cool enough to handle, carefully lift the cake from the pan and let it cool on a rack until completely cooled. If the cake has domed in the middle, use a bread knife to level it for even slicing.
  • Prepare the glaze by combining the ingredients in a small saucepan over medium-low heat until the butter and sugar melt. Poke holes with a fork on the top of the cake to allow the glaze to penetrate. Transfer the cake to a serving dish, then generously brush or drizzle the glaze over the cake.
