Cinnamon-spiced apple cake with canned apples for a rich, flavorful twist.
Ingredients:
  • Melted butter, for greasing
  • 125g unsalted butter, at room temperature, cubed
  • 220g (1 cup) caster sugar
  • 225g (1 1/2 cups) plain flour
  • 2.50 gm bicarbonate of soda
  • 1.25 gm mixed spice
  • 425g apple
  • 250g (1 1/2 cups) mixed dried fruit
Instructions:
  • Preheat your oven to 180C. Grease an 18cm square cake pan with luscious melted butter and line the base with non-stick baking paper.
  • In a medium mixing bowl, use electric beaters to whip the butter until smooth. Mix in the sugar, scraping down the sides occasionally, until the mixture is pale and creamy.
  • Combine the flour, bicarbonate of soda, and mixed spice before sifting over the butter mixture. Use a large metal spoon to gently fold in until just combined. Then, add the apples and dried fruit, and fold in until just combined.
  • Pour the cake batter into the pan and level it with the back of a spoon. Bake in a preheated oven for 1 hour or until a skewer inserted into the middle comes out clean. Let the cake rest for 5 minutes before transferring to a wire rack to cool. Slice and enjoy!
