Fall-inspired apple cider doughnuts - farm-fresh taste in every bite!
Ingredients:
  • 1 cup apple cider
  • 1 cup white sugar
  • 2 eggs
  • 0.5 cup buttermilk
  • 3.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon ground cinnamon
  • 0.125 teaspoon ground nutmeg
  • 0.25 cup all-purpose flour, for dusting
  • 1 cup confectioners' sugar
  • 2 tablespoons apple cider
  • 1.25 cups confectioners' sugar
  • 0.33333334326744 cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups oil for frying, or as needed
Instructions:
  • In a small saucepan, simmer 1 cup apple cider until it reduces to 1/4 cup, for about 20 to 30 minutes. Allow it to cool before using.
  • In a bowl, beat butter with an electric mixer until creamy for 1 to 2 minutes. Add 1 cup white sugar and continue beating until light and fluffy for 2 to 3 minutes.
  • Add the eggs one by one to the butter mixture, ensuring they are fully incorporated. Combine the buttermilk and reduced cider with the butter mixture.
  • In a bowl, combine 3 1/2 cups of flour, baking powder, baking soda, 1/2 teaspoon of cinnamon, salt, and nutmeg. Mix well. Add the flour mixture to the buttermilk mixture and stir until the dough is just combined.
  • Place the dough on a lightly floured piece of parchment or wax paper, sprinkle with flour, then invert onto a baking sheet and sprinkle with more flour.
  • Flatten dough to 1/2-inch thickness, dusting with extra flour as needed. Place dough on baking sheet and freeze until slightly firm, for approximately 20 minutes.
  • Using a 3-inch doughnut cutter, cut the cold dough. Re-roll any scraps and cut additional doughnuts. Place the cut doughnuts and holes on a floured baking sheet. Refrigerate for 20 to 30 minutes.
  • Combine 1 cup white sugar and 1/2 teaspoon cinnamon in a bowl, then move the cinnamon sugar to a paper bag. Mix 1 cup confectioners' sugar with 2 tablespoons apple cider in a separate bowl. Blend 1 1/4 cups confectioners' sugar, maple syrup, and vanilla extract in a third bowl.
  • Heat oil in a deep-fryer or large saucepan until it reaches 350 degrees F (175 degrees C).
  • Fry doughnuts and doughnut holes in batches in hot oil, flipping once, until they are golden brown and fully cooked, approximately 1 minute per side. Place the cooked doughnuts on paper towels to absorb excess oil.
  • Coat warm doughnuts in cinnamon sugar by shaking them in a paper bag or drizzle with either cider glaze or maple syrup glaze.
