Delicious apple cider and cinnamon donuts - a timeless treat for any season!
Ingredients:
  • 2 cups white sugar, divided
  • 1 tablespoon ground cinnamon
  • 1.5 cups apple cider
  • 3.75 cups all-purpose flour, divided
  • 2 teaspoons baking powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 0.25 cup butter, melted
  • 1 egg yolk, lightly beaten
  • 6 cups vegetable oil for frying
Instructions:
  • Combine 1 cup of sugar and 1 tablespoon of cinnamon in a resealable plastic bag.
  • In a saucepan, bring apple cider to a gentle boil. Stir occasionally and let it reduce to 1/2 cup, which takes approximately 20 minutes. Once done, remove from heat and let it cool.
  • In a large bowl, combine 1 cup flour, 1 cup sugar, baking powder, 2 teaspoons cinnamon, and salt. In a separate bowl, mix butter, eggs, egg yolk, and cooled cider until smooth; then incorporate into the flour mixture. Stir in remaining 2 3/4 cups flour until dough is smooth. Refrigerate dough for 10 minutes.
  • Preheat oil in a large pot or deep fryer to 375 degrees F (190 degrees C) until it shimmers.
  • Transfer the dough onto a generously floured work surface using floured hands and gently flatten it to 1/2-inch thickness. Use a doughnut cutter or 2 round cookie cutters (1 large and 1 small) to shape the dough into doughnuts. Re-gather any scraps, pat the dough again, and cut out additional doughnuts until all dough is used.
  • Gently place doughnuts in batches into the hot oil. Fry until they float to the surface and turn golden brown, approximately 2 to 3 minutes. Flip and fry the other side until golden brown, about 1 1/2 minutes.
  • Remove doughnuts from the oil using a slotted spoon and let them cool on a paper towel-lined plate for about 1 minute. Coat the cooled doughnuts in the reserved cinnamon sugar. Reheat the oil to 375 degrees F (190 degrees C) before frying the next batch.
