Apple cider-infused chunky muffins - perfect for a quick, energizing snack on-the-go, freezer-friendly too!
Ingredients:
  • 0.25 cup unsalted butter, at room temperature
  • 0.25 cup butter-flavored shortening
  • 0.66666668653488 cup white sugar
  • 1.6666667461395 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 0.125 teaspoon ground nutmeg
  • 1 cup apple cider
  • 2 apples - peeled, cored, and diced small
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and prepare 8 muffin cups with paper liners.
  • In a stand mixer, beat butter, shortening, and sugar until creamy at medium-high speed. Add eggs one by one, mixing thoroughly after each and scraping bowl sides as needed.
  • In a separate bowl, combine flour, baking powder, cinnamon, salt, and nutmeg. With the stand mixer on low, gradually add the flour mixture and cider, starting and ending with the flour. Mix thoroughly, then transfer the mixture to a mixing bowl. Gently fold in the apples using a wooden spoon.
  • Fill the prepared muffin cups with batter using about 2 heaping tablespoons for each cup.
  • Bake in the preheated oven for around 30 minutes, or until a toothpick inserted in the center comes out clean. Allow to cool before serving.
