Apple cobbler with ginger buttermilk biscuit crust, bursting with fruit and perfectly balanced sweetness.
Ingredients:
  • Filling ingredients:
  • 3 lbs of a variety of good cooking apples such as Granny Smith, Pippin, Fuji, Golden Delicious, Gravenstein
  • 2 Tbsp lemon juice
  • 4 Tbsp unsalted butter
  • 1/2 cup sugar
  • 1 Tbsp flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Crust ingredients:
  • 2 cups all purpose flour
  • 1/4 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 cup (1 stick or 4 ounces) unsalted butter, cut into small cubes
  • 1 cup buttermilk
  • 1 Tbsp finely chopped crystallized ginger
  • 1 teaspoon lemon zest or orange zest
Instructions:
  • Prepare the apples by peeling, quartering, and coring them. Cut into 1/4 to 1/2 inch chunks, then toss in a bowl with lemon juice to prevent browning.
  • Prepare the apple cobbler filling: In a large pan over medium heat, melt butter. Add chopped apples along with the lemon juice, sugar, cinnamon, and nutmeg. Ensure the spices and sugar are evenly coating the apples. Partly cover the pan and cook for about 10 minutes until apples are just tender. Mix in vanilla and sprinkle a tablespoon of flour, tossing to coat.
  • Pour the apple cobbler filling, along with all the flavorful juices, into a 10-inch pie dish, a 9-inch deep-dish pie dish, or a 9x9-inch baking dish.
  • Preheat your oven to 425°F for the perfect temperature.
  • Prepare the cobbler topping: In a medium bowl, combine flour, sugar, baking powder, baking soda, and salt. Add cubed butter and coat with the flour mixture. Use fingertips or a pastry blender to cut the butter into the flour until the pieces are pea-sized. Stir in candied ginger and zest. Make a well in the center, pour in the buttermilk, and gently mix until the dough forms. Avoid overworking the dough.
  • Sprinkle the cobbler dough over the apples in the baking dish. For extra flair, sprinkle a little brown sugar on top.
  • To bake the cobbler, set a rimmed baking sheet on the bottom oven rack to catch drippings. Place the cobbler on the rack above and bake at 425°F for 10 minutes until the top starts to brown. Reduce the heat to 350°F and continue baking for 30 minutes until the topping is cooked through and the filling bubbles. Enjoy warm with whipped cream or vanilla ice cream.
