Elevate your lunchbox and tea time with this simple and delicious apple crumble slice.
Ingredients:
  • 1 x 250g packet Scotch Finger biscuits, finely crushed
  • 100g butter, melted
  • 6 apples, peeled, cored and chopped
  • 32.00 gm brown sugar
  • 1 vanilla bean, split and seeds scraped
  • 2 cinnamon sticks
  • 1 x 250g packet Butternut Snap Cookies, roughly crushed
Instructions:
  • 1. Preheat the oven to 180°C and line a 20cm x 30cm tin with non-stick baking paper. 2. Combine Arnott's Scotch Finger biscuits and butter in a bowl, then press the mixture firmly into the base of the tin, smoothing the top with a spatula. 3. Refrigerate until set.
  • In a large saucepan over high heat, combine apples, sugar, vanilla seeds, and cinnamon sticks. Stir well and cover. Cook for 5-8 minutes until apples have softened, stirring occasionally. Remove from heat, cover, and let it stand for 10 minutes. Discard cinnamon sticks, roughly mash apples, then spread over the biscuit base. Scatter crushed Arnott's Butternut Snap Cookies on top and bake for 15 minutes or until golden. Refrigerate for at least 2 hours until set before slicing.
